Pozole Verde Recipe

Ingredients
First Step of Recipe:
8 C chicken stock
1 tsp kosher salt
1 Tbsp coriander seeds
1 Tbsp dried Mexican oregano
2 bay leaves
2 tsp ground cumin
1 tsp freshly ground black pepper
2 lbs boneless, skinless chicken breasts (or use thighs)
Verde Sauce Ingredients:
1 cup water
1 lb tomatillos
1 large onion, rough chopped
3 medium poblano chilies, seeded and sliced
1 jalapeno, seeded and halved
6-8 large garlic cloves
1 Tbsp olive oil
Last Step Ingredients:
4 C cooked hominy- or three 15 oz cans rinsed and drained.
1 whole bunch cilantro, (tender stems ok)
Recommended Toppings:
Shaved Radish
Sliced Cabbage
Salsas
Chopped Onions
Avocado
Cilantro
Shredded Cheese
Chicharrones, tostadas, or tortilla chips
Red chile flakes
Instructions
In a large dutch oven, bring the chicken stock, salt, coriander, cumin, oregano, and pepper to a boil.
Add the chicken breasts, cover, and simmer on low until cooked through about 25 minutes. If you have a thermometer, you can easily check to make sure your chicken is cooked to 165 degrees!
Transfer the chicken breasts to a cutting board and shred the meat
Return the chicken back to the stock.
Make the Verde Sauce:
In a blender or food processor, add one cup of water. Add tomatillos, onion, garlic, poblanos, jalapeno, and garlic. Blend until smooth, scraping down sides if necessary. Keep the blender close by for the next step (no need to rinse it)
In a skillet, add the oil and tomatillo puree cooking over medium heat, stirring occasionally, until the sauce turns a deep green, about 10 minutes.
To the blender, ladle in 1 cup of broth from the dutch oven, set aside.
Pour the cooked verde sauce into the dutch oven.
Back to the soup pot
Add the 3 cups of the hominy to the dutch oven (reserving 1 cup) and bring to a gentle simmer over moderate heat.
Add the cilantro and their tender stems into the blender with the chicken stock. Add the reserved 1 cup of hominy. Blend again until smooth. If you need more liquid to get the blender going, just ladle from the pot.
Mix the blended ingredients into the soup.
Season with salt, pepper and cook on warm until heated through.
Serve the pozole in bowls along with desired toppings.
Pozole or Posole? Both spellings are acceptable for this delicious soup that is pronounced the same either way. The "z" spelling is preferred in Mexico, while the "s" is used more commonly in border towns and some areas of the US.
