Zuppa Toscana is a classic Italian soup that's perfect for colder days. Made with spicy Italian sausage, kale, potatoes, and heavy cream, it's a flavorful and hearty dish that's sure to satisfy. Our version of this easy Zuppa Toscana soup recipe is Gluten-Free. For those who want to ensure they are avoiding gluten, it's important to double check the sausage label to ensure it's gluten-free!

It's also versatile and can be easily customized to fit different dietary needs, such as making it dairy free, vegetarian or vegan. If you simply need the recipe to be dairy free, swap out the heavy cream for coconut cream. And for those who prefer a plant-based version, swapping out the sausage for a plant-based option and using coconut cream or vegetable broth can create a delicious vegan or vegetarian alternative. Kale is also a key ingredient in this soup, offering a nutritious boost with vitamins and minerals. If you're looking for a comforting and flavorful soup, give Zuppa Toscana a try - it's a classic dish that's sure to impress.

  • 1- pound spicy Italian ground sausage (use mild for more kid-friendly)

  • 4 tablespoons butter

  • ½ white onion - diced

  • 1 tablespoon minced garlic

  • 6 cups chicken broth

  • 2 cups water

  • 4-5 yellow potatoes - cut into 1-inch pieces

  • 3 teaspoons salt - or to taste

  • 1 teaspoon black pepper

  • 2 cups heavy cream

  • 4 cups chopped kale

Instructions

  1. Saute sausage for 5-6 minutes in a large pot until just browned. (Dietary restriction? Swap out the sausage for a vegan sausage, you may need to add more butter or oil to substitute for a lack of fat)

  2. Transfer the sausage to a bowl using a slotted spoon (you want to keep all those juices in the pot for the next step!). Set aside for now.

  3. In that same pot, add butter (Dietary restriction? Swap this for olive oil or avocado oil) and saute onions over medium heat until translucent and starting to slightly brown.

  4. Add garlic and saute for 1-2 minutes until fragrant.

  5. Add chicken broth (Dietary restriction? Swap this for a rich vegetable or mushroom stock), water, potatoes and salt and pepper. Bring to a boil and boil until potatoes are tender. Check with a fork to ensure they are tender.

  6. Stir in kale (you could swap this for collard greens or swiss chard to mix it up!) and heavy cream (Dietary restriction? Swap this for coconut milk instead).

  7. Add sausage back into the pot, stirring to combine.

  8. Add salt and pepper if desired

  9. Optional: Serve garnished with parmesan cheese and croutons
