Recipe of the Month | White Bean Soup with Lemon Gremolata

This winter warming soup is one of our favorite recipes. Perfect for the cold winter months, we serve it at catered events, but it can also be easily made at home for family dinners. For a heartier soup, you can also add kale, spinach, carrots, or any fresh vegetables you may have on hand. It is healthy and sure to warm you up on those cold winter nights.

White Bean Soup with Lemon Gremolata

Makes 4 servings

Ingredients

Soup:

2 tsp. Olive oil

1 c. Chopped onion

½ c. Chopped celery

1 tsp. Minced garlic

2 c. Fat-free chicken broth

½ c. Water

¼ tsp. Black pepper

1 can Cannelloni beans, rinsed & drained (19 oz.)

1 Bay leaf

Gremolata:

3 Tbsp. Finely chopped fresh parsley

2 Tbsp. Grated lemon rind

2 tsp. Minced garlic

Directions

Heat olive oil in large saucepan over medium heat. Add onion, celery and garlic. Sauté five minutes until vegetables are tender. Stir in broth and next four ingredients. Bring to a boil. Reduce heat and simmer 10 minutes, stirring occasionally.

Combine chopped parsley, lemon rind and garlic. Sprinkle over soup when ready to serve.
