Recipe of the Month | Rum-Grilled Salmon Skewers
/At Cuisine Unlimited, we are always doing our best to make sure we stay on top of both culinary and design trends. This year, we are seeing a focus on Cuban culture in both areas, and had the opportunity to showcase it at Salt Lake Magazine's 2016 Dining Awards.
Trolley Square was converted into a Little Havana for the night, with colorful facades surrounding the stage. Themed bars and buffet stations included a Cuban BBQ, seaport, and a street market.
Guests were delighted with an array of Cuban fare, from fresh salads and empanadas to street tacos and beignets. One of the most popular options was the rum-grilled salmon, so we figured we should share the recipe so you can get a taste of the Dining Awards right at home!
The recipe is perfect for a BBQ as we start to see warmer weather in northern Utah. The skewers can be easily grilled for a family dinner, or made in larger quantities for a summer party! Serve with pineapple, coconut rice, and an avocado salad for an authentic Cuban experience.
Rum-Grilled Salmon Skewers
Makes 10-12 skewers
Ingredients
¼ cup Spiced Dark Rum
3 Tbsp. Orange Juice
2 Tbsp. Brown Sugar
1 ½ tsp. Smoked Paprika
½ tsp. ground red pepper
2 tsp. diced green onions
salt & pepper – to taste
2 ½ lbs. skinless salmon fillet
Directions
In large bowl, mix all ingredients except salmon and make the marinade.
Cut salmon into chunks and marinate for 1-2 hours. Skewer on to presoaked bamboo skewers. Place on hot grill and cook 8-12 minutes turning occasionally.
